Hot Spiced Cider

Serves 6 to 8

2 quarts fresh apple cider
8 cinnamon sticks
1/2 teaspoon while cloves
1/8 teaspoon ground allspice
1/4 cup sugar
peel of 1 lemon (yellow part only)

Mixture to garnish glasses:

1 slightly beaten egg white

organic sugar

Bring first six ingredients to a boil.  Reduce heat and simmer 5 minutes.

To frost the mugs: Place 1 egg white into a small bowl and beat until slightly frothy.  Dip the rims of 8 mugs or heat-safe glasses into the egg white and then the sugar.

Strain cider into mugs or heat-safe glasses. Place cinnamon stick into each glass to garnish.  Serve immediately.

Spiced Tea Punch

Serves 8 to 10

1 cup Florida Crystals certified organic sugar
4 lemons
2 oranges, halved and thinly sliced
12 whole cloves
3 cinnamon sticks
1-1/2 quarts strong brewed tea
2 cups water

1 liter ginger ale
2-1/2 cups of light rum (optional)

In a non-aluminum saucepan, combine all ingredients except soda.  Over low heat, bring to boil, stirring to bruise fruit.
Cool 1 to 2 hours.  To serve, combine with ice in pitcher or punch bowl.  Add soda and rum (if desired).

Mint Chocolate Smoothie
A cool and refreshing drink that also makes a great snack.

Ingredients:
2 cups of Vanilla Truffle or Chocolate Underground yogurt
2 cups milk
1/2 teaspoon mint flavor
1/2 cup chocolate syrup
Directions:
Combine ingredients in blender. Blend until smooth. Garnish with fresh mint leaves. 
Yields: 4 short glasses

Pumpkin Pie Smoothie

Ingredients:

•1 cup R.W. Knudsen Family® Organic Apple juice

•1/2 cup R.W. Knudsen Family® Organic Pear juice

•1/2 cup canned pumpkin

•1/2 cup plain soy milk

•1/4 cup honey

•1/2 teaspoon ground cinnamon

•2 tablespoons raw hulled pumpkin seeds

•2-3 apple wedges

Directions:

•Mix together apple and pear juices. Freeze into cubes (about 2 hours).  Blend the following in a blender until smooth: juice cubes, pumpkin, soy milk, honey, cinnamon and nutmeg.

•Pour into 2-3 glasses.

•Sprinkle a few pumpkin seeds on top of each.

•Decorate rim of glass with an apple wedge.

Makes 2-3 Servings

Creamy Raspberry Sipper

Serves 4

Ingredients:

1 1/4 cup of fresh raspberries
1/4  cup of Mountain Sun Grape Acai juice
11/4 cup of Walnut Acres Raspberry juice
1 1/2 cup of Frozen Soy Dream French Vanilla
1 tablespoon of lemon juice
10 ice cubes
Fresh mint for garnish

Directions:

Combine raspberries and grape juice, and raspberry juice, in a blender, cover and blend until smooth,  Combine the reserved liquids, ice cream and lemon juice, cover and blend until smooth, Add ice cubes, and blend until frothy, Garnish with mint sprigs and serve immediately.

Gojimum Dessert Tea

(Yield: one serving)
 Ingredients (raw and organic unless noted)
11/4 cups pure water
2 teaspoons Himalayan Goji Berries [Himalayan gojiberries look like a cross between a cranberry and a raisin; they are available at many health food stores and online, Organic Nectars sells them as well]
1 teaspoon dried chrysanthemum flowers
1 teaspoon raw agave syrup or to taste
Procedure

Bring pure water to a boil. Add Gojis, Mums, and Raw Agave Syrup to taste. Cover, steep 5 to 7 minutes. Strain tea into mug or cup. Use hot or cold. Also try making this with Organic Nectars Incan Golden Berries for a zesty Goldenberry Mum Tea.
